Ingredients

  • 1/2 cup Butter (113g)
  • 3 tsp Minced Garlic
  • 2 cups Heavy Cream
  • 2 cups Freshly Grated Parmesan Cheese
  • 1.5 cup Freshly Grated Asiago Cheese
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  • Melt butter in a large skillet over medium-low heat. Add minced garlic and cook for 1 minute until fragrant.
  • Pour in heavy cream and bring to a gentle simmer, stirring constantly.
  • Reduce heat to low. Gradually stir in Parmesan and Asiago cheeses until melted and smooth.
  • Season with salt and pepper to taste. Cook for 2-3 minutes until sauce thickens slightly.
  • Remove from heat and serve hot over your favorite pasta.

Notes

- Use freshly grated cheeses; pre-shredded varieties often contain anti-caking agents that prevent smooth melting. This is crucial for a silky easy alfredo.
- Keep the heat low! High heat can cause the cheese to separate and the sauce to become grainy or oily. If it starts to look greasy, remove it from the heat and whisk vigorously.
- If your sauce becomes too thick, thin it with a tablespoon or two of warm pasta water until it reaches your desired consistency. Don't add cold water or milk.
