  • 3 tablespoons vinegar (red wine, apple or white)
  • 1 tablespoon cilantro (chopped)
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl or resealable plastic bag, combine chicken breasts, vegetable oil, vinegar, chopped cilantro, chili powder, garlic powder, Italian seasoning, ground cumin, salt, and black pepper.
  2. Marinate the chicken in the refrigerator for at least 4 hours, or preferably overnight for maximum flavor.
  3. Preheat your grill to medium heat and lightly oil the grates to prevent sticking.
  4. Grill the marinated chicken for 4-5 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink.
  5. Top the grilled chicken with shredded cheese and diced tomatoes. Close the grill lid for 1-2 minutes to allow the cheese to melt, or transfer to a serving platter and top immediately.
  6. Garnish with additional fresh cilantro if desired, and serve immediately.
