Method
- Gather all ingredients. Spray an 8 x 8 baking pan with cooking spray. Preheat oven to 350F. Melt 2 tablespoons peanut butter and 1 teaspoon salted butter together in microwave for 30 seconds, then add 1 teaspoon stevia/erythritol blend and combine. Set aside.
- In a bowl or food processor, combine 3/4 cup stevia/erythritol blend, 1/3 cup unsweetened cocoa powder, 1/3 cup almond flour, and 1/8 teaspoon kosher salt. Melt 1/2 cup salted butter in microwave, then add to flour mixture and combine. Add 2 large eggs and 2 tablespoons half-and-half. Combine everything well. Pour into prepared pan.
- Put dollops of peanut butter mix on top of the brownie mix. Take a knife and swirl the peanut butter through the chocolate. Sprinkle the top lightly with salt. Bake for 20 minutes.
- Remove from oven and set on a cooling rack. Cool completely before serving, for best flavor.
