Ingredients
  

  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 4 pieces of bacon, cooked and crumbled
  • 1/2 cup diced tomatoes
  • 2 tablespoons sliced green onions

Method
 

  1. Preheat oven to 400℉. Preheat a large oven-safe skillet to medium-high heat and add the olive oil. While skillet is preheating, pound chicken breasts to flatten them if they are thick. Salt and pepper the chicken breasts.
  2. Add chicken to pan and cook 4-5 minutes per side or until no longer pink.
  3. Turn off the heat and pour BBQ sauce on each chicken breast evenly.
  4. Sprinkle the cheese evenly on the chicken breasts and top with the crumbled bacon.
  5. Bake the chicken for 2-3 minutes until cheese is melted.
  6. Top with bacon, diced tomatoes, and sliced green onions. Serve.

- To ensure chicken is fully cooked and safe, an internal temperature of 165°F (74°C) should be reached before removing it from the oven.
- If your chicken breasts are very thick, slice them horizontally to create thinner cutlets for more even cooking.
