Ingredients
Method
- In a 6-8 quart slow cooker, add the beef chuck roast.
- Sprinkle the au jus gravy mix, then the ranch dressing mix over the roast.
- Place the butter on top of the roast.
- Add the 6 whole pepperoncini peppers around the roast.
- Pour the 1/4 cup of pepperoncini juice into the slow cooker.
- Cook for 6-8 hours on low or 4-6 hours on high until the meat is fork-tender and falls apart easily. Shred with two forks and return to the juice in the slow cooker. Serve on cooked noodles, rice, mashed potatoes, or rolls with Provolone cheese.
Notes
- For the most tender Mississippi Pot Roast, ensure your chuck roast reaches an internal temperature of 200-205°F (93-96°C) for optimal shredding. It should practically fall apart with gentle pressure.
- If the roast seems to dry out during cooking, add a splash of beef broth or water to keep it moist. This is especially useful if your slow cooker tends to run hot.
- I've found that placing the butter directly on top of the roast helps it melt down and distribute its richness more evenly, basting the meat as it cooks. Nutrition information is an estimate, calculated automatically. Values vary with brands, substitutions and portion sizes.
