Method
 

  1. In a mixing bowl, whip the heavy cream until soft peaks form (about 2-3 minutes). Set aside.
  2. In a separate mixing bowl, whip the cream cheese until light and fluffy. Add the powdered monk fruit sweetener, lemon juice, and vanilla extract and whip until combined. This will take 2-3 minutes.
  3. Fold in the whipped heavy cream.
  4. Transfer the lemon mousse to individual containers, cover, and refrigerate for at least 2 hours. Serve with lemon wedges if desired!
