  • 1/2 cup peanut butter
  • 6 ounces sugar-free milk chocolate
  • 10 ounces salted peanuts
  • Sea salt for sprinkling
  • Waxed paper lined baking sheet
  • 1 teaspoon vanilla extract

Method
 

  1. Set a heatproof bowl over a pan of barely simmering water. Add the peanut butter and the chocolate and stir until melted and smooth.
  2. Add the peanuts and stir to coat in the chocolate. Drop by rounded spoonfuls onto a waxed paper lined baking sheet. You should get about 24 mounds.
  3. Sprinkle with sea salt, if desired.
  4. Chill the clusters until firm, about 30 minutes.
