  • 1 cup water
  • 1 cup pecans
  • 1/4 cup coconut butter
  • 1/4 cup freeze dried apples
  • 2 tablespoon erythritol
  • 1 tablespoon psyllium husk powder
  • 2 teaspoon pumpkin pie spice
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish. Gather all your ingredients.
  2. Combine all ingredients – water, pecans, coconut butter, freeze-dried apples, erythritol, psyllium husk powder, pumpkin pie spice, baking powder, and vanilla extract – into a food processor.
  3. Process the mixture until it's completely smooth and well combined. Scrape down the sides as needed.
  4. Pour the smooth batter evenly into the prepared baking dish.
  5. Bake for 40-45 minutes. To check for doneness, insert a toothpick into the center; it should come out clean.
  6. Let the bars cool completely in the pan before attempting to cut them into serving-sized pieces. Enjoy!
