Heat a large skillet to medium heat. Melt the butter and add the thinly sliced onions; reduce the heat to low.
Add a pinch of salt to the onions and stir occasionally. Allow at least 15 minutes for caramelizing.
While onions caramelize, season pork chops with Italian seasoning, garlic powder, onion powder, salt, and pepper.
When onions are golden, remove them from the pan.
Increase heat to medium, add pork chops (with 1 tablespoon olive oil if needed), and cook for 2-3 minutes per side until golden brown.
Return cooked onions to the skillet with pork chops. Pour in beef broth and red wine. Simmer for 7-10 minutes until sauce reduces by half.
Add shredded Gruyere to pork chops, reduce heat to low, and cook covered for 4-5 minutes until cheese melts.
Optionally, broil to brown the cheese.
