Ingredients
  

  • 1 (12 ounce) package frozen spinach, thawed and squeezed dry with paper towels
  • 4 ounces cream cheese, softened
  • 1 ½ cups shredded Monterey Jack cheese
  • 6 large eggs, (beaten)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter, (melted)
  • 2 garlic cloves (minced)
  • 1/2 teaspoon salt

Method
 

  1. Preheat oven to 350 degrees F and grease a 9" baking dish, square or round.
  2. In a large bowl, add all of the ingredients and stir together well. Pour spinach mixture into the prepared baking dish.
  3. Bake for 35-45 minutes or until the center is set.

Notes

- Ensure spinach is thoroughly squeezed dry to prevent a watery soufflé.
- Do not open the oven door during the first 30 minutes of baking to help the soufflé rise properly.
- For a richer flavor, use full-fat cream cheese.
- Cook until an internal temperature of 160°F (71°C) is reached for safe consumption of eggs.
