  • 2 large eggs
  • 2 tablespoons cottage cheese
  • 2 tablespoons butter, melted
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pink himalayan or sea salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley

Method
 

  1. Preheat oven or air fryer to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the eggs, cottage cheese, and 2 tablespoons melted butter until well combined.
  3. In a separate bowl, whisk together the almond flour, baking powder, and salt. Add dry mixture to the wet ingredients and stir until just combined. Stir in the shredded cheddar cheese.
  4. Drop batter into dollops onto the prepared baking pan, about 3 tablespoons each, spacing them evenly.
  5. Bake for 12-14 minutes or until biscuits turn golden brown.
