Creamy Key Lime Popsicles Recipe

Ingredients
  

  • 2/3 cup high protein yogurt
  • 2/3 cup keto condensed milk
  • 1/2 cup protein powder (whey or egg white)
  • 1/3 cup lime juice
  • 2 tsp lime zest
  • 2 to 3 packets True Lime
  • Sweetener as needed
  • Natural food coloring
  • 2 tbsp keto cookie crumbs

Method
 

  1. In a high-powered blender or food processor, combine the yogurt, condensed milk, protein powder, lime juice, and lime zest. Blend until smooth and creamy.
  2. Add 2 packets of True Lime (or 1/2 tsp lime flavor), blend for 15 seconds, and taste. Adjust lime flavoring and sweetener as desired.
  3. Add 1 to 2 drops green food coloring and 1 drop yellow food coloring and blend until well mixed. This step is optional.
  4. Divide the mixture evenly between 6 popsicle molds, filling to about 1/2 inch from the top. Sprinkle each with some of the cookie crumbs.
  5. Press popsicle sticks about two-thirds of the way down into the popsicles. Freeze until firm, preferably overnight for at least 8 hours.
  6. To unmold, heat some water in a kettle. Pour the hot water over the outside of the popsicle mold you wish to release for 10-15 seconds, then tug the stick gently. Use more hot water as needed.

Notes

- For the creamiest key lime popsicles, ensure your yogurt is full-fat and not watered down. Greek yogurt can work too but might be thicker.
- Don't overdo the food coloring; a subtle hint of green and yellow gives a natural key lime look without being artificial.
- To prevent freezer burn, store finished key lime popsicles in an airtight container for up to 2 weeks.
