  • 4 cups low-sodium chicken broth
  • 1 (14 ounce) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 10 ounces cauliflower florets
  • 1 cup heavy cream
  • 3 cups spinach, roughly chopped

Method
 

  1. In a large Dutch oven or pot, brown the Italian sausage and diced onion over medium-high heat until cooked through.
  2. Add the red pepper flakes and minced garlic, cooking for an additional 30 seconds until fragrant.
  3. Pour in the chicken broth, crushed tomatoes, tomato paste, and cauliflower florets. Bring to a boil, then reduce heat and simmer for 10 minutes until the cauliflower is tender.
  4. Stir in the heavy cream and chopped spinach. Heat for 5 minutes until the soup begins to thicken. For extra creaminess, mash some of the cauliflower with a spoon, leaving some florets for texture. Serve with a sprinkle of Parmesan cheese.
