  • 8 ounce shrimp
  • 10 medium button mushrooms
  • 1 tablespoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 2 large green onion

Method
 

  1. Heat the avocado oil in a large skillet over medium-high heat. Add the diced garlic, shrimp, and button mushrooms.
  2. Stir-fry for 3-5 minutes until the shrimp are pink and cooked through, and the mushrooms have browned and softened.
  3. Pour in the soy sauce and apple cider vinegar. Continue to stir-fry for another 1-2 minutes until the sauce thickens slightly.
  4. Mix in the chopped green onions, toss to combine, then remove the skillet from the heat.
  5. Serve immediately, ideally over cauliflower rice for a complete keto meal.
